Summertime is all about late night visits to the ice cream parlor, poolside popsicles, and cool frozen treats to help relieve the heat. So many of the store bought treats are laden with artificial flavors and sweeteners. These DIY popsicles have no added sugar and take advantage of summer’s sweet bountiful fruit.

Gingery Cherry Berry Dark Chocolate Popsicles

Ingredients:
1 1/2 cups pitted black cherries
1 cup mixed berries
1/2 cup pomegranate juice
2 tsp minced ginger
1 cup chopped dark chocolate
2 tbsp cacao nibs

Directions:
1. Blend all ingredients except dark chocolate and cacao nibs in a food processor or blender and pour into six popsicle molds. Place in freezer until frozen through, about 3 hours.
2. Once frozen, melt chocolate and place in a small bowl. Dip one popsicle and lay flat on a cookie sheet lined with parchment paper. Sprinkle with cocoa nibs. Repeat with remaining popsicles. Serve immediately or place back in the freezer.

Minty Pina Colada Popsicles

Ingredients:
2 cup fresh pineapple chunks
1 cup coconut milk
2 tbsp chopped mint
zest and juice of 1 lime

Directions:
Blend ingredients in a food processor or blender and pour into six popsicle molds. Place in freezer until frozen through, about 3 hours.

Chocolate Almond Popsicles

Ingredients:
6 Medjool dates, roughly chopped
1 cup oat milk
2 ripe bananas
2 tbsp cocoa powder
2 tbsp almond butter

Directions:
Blend ingredients in a food processor or blender and pour into six popsicle molds. Place in freezer until frozen through, about 3 hours.
